Simple idea’s to inspire your lunch menu!
Option #1: Mexican salad with corn tortillas: 1 cup black beans, 1 cup corn, 1 avocado, 2 tomatoes, cilantro, 1 small bunch of lettuce, 1 fresh garlic clove. Mix with olive oil and lime. This can be eaten in a bowl or as a wrap filling for 2 tortillas as a burrito.
Option #2: Quinoa, chickpeas and grilled veggie salad. 2 Cups of cooked quinoa, half a cup of chopped herbs (parsley, dill, cilantro…, 1 grilled zucchini, 1 grilled eggplant, 5 broccoli florets, chopped garlic, olive oil and tons of lemon juice!
Option #3: Grilled sweet potatoes over a huge green salad with broccoli topped with tahini-mustard homemade dressing.
